Glad I didn't read the Yelp reviews before coming here and instead saw the Google reviews. Would've missed out on an amazing experience. I'll address what seems to be the most prevalent complaint, which is the service. While it was a bit slow, this is because the place was packed, and the server was extremely apologetic and always asked us if we needed anything. Now let's talk about the drinks. I would definitely recommend the cafe de la olla. It is the best I've had out there in any restaurant! I had one cup after another, no complaints. We ate the birria stew, a quesataco de birria, and I can't forget the chips and salsa that come once you sit down. The salsa is amazing, the meat is great, the consome is on point, the cheese on the quesataco was perfect, I couldn't have asked for a better experience. Everything was homemade down to the tortillas. We will definitely be coming back.

I pass this place all the time when I am in the area for work and decided to give it a try. From the moment I walked in my waiter, Brandon was on top of everything. He explained the menu since it is in Spanish and asked if there was anything in particular I was craving. Their salsa and chips were fresh and the tacos dorado consisting of de res (hard shelled shredded beef) and papa (potato) were excellent. Price was right for a sit down Mexican establishment. I will definitely be back.

After a week of looping through Nebraska and South Dakota, chasing an eclipse and the best steak in America, I was ready to be home, in San Diego, chowing on Mexican food. Yes, I know I could have gotten a decent Mexican meal in Denver, but there's something special about eating such food in South Bay - a more-or-less extension of Baja; about sliding into your chair in the birrieria, mouth watering as the aroma of hand-made corn tortillas wafts from the kitchen - like in those old cartoons, where the smell turns to a hand with an index finger that beckons, then levitates, the hungry person. So I got home, and after catching up with real life, gave in to my hunger, driving south to Chula Vista to join my buddy Jay K. at Asi Es Jalisco Birrieria, a place I first tried, a while back, with another friend, Andy M. It only took one solid meal of birria de chivo, consomé, some killer tortillas and a gallon of agua de Jamaica, to fix my Mexican crave. Our server, Brandon, helped with our table's special requests - for me, "tatemada", but with less juice than usual - and for Jay, a bowl of birria con carne de maciza, with no bones. Brandon checked frequently to see if we needed anything, and chatted a bit, in a friendly, unobtrusive way. This was the meal I'd hoped for: substantial without being heavy, the goat meat tender and flavorful but not strongly-flavored, the consomé well-skimmed, light and savory. Jay enjoyed his birria, and we passed a pleasant afternoon, eating as we talked about family, food and travel. Pretty much exactly what a good restaurant is made for. At $40, lunch wasn't cheap, but we ordered a lot of food, and all of our immediate needs were met, so we got value for the money we spent. Asi Es Jalisco is one of several outstanding birrierias in Chula Vista, along with Don Rafa and Fernandez Restaurant. Among these three, Asi Es Jalisco has the most ambitious menu, offering classic items from central Mexico, including caldo tlalpeño and the flan/crème brûlée hybrid, jericalla. Así es Jalisco is a Birrieria restaurant. As the name implies, recipe is from the state of Jalisco. They have lots of seating and they greet you well. They serve the food quite fast. Make sure to ask for the Mexican Cola, that's coke in a glass bottle in case you are wondering. As I remember they have two options for birria, beef or goat. For the first timer, I recommend to ask for one beef birria taco and one goat birria taco. After you decide which one satisfies your taste buds the most, then ask for a whole order of that birria. You'll get home made tortillas with that plate. I almost forgot, ask the server to put some beans in the plate, you'll thank me later. The it's up to you as to how much lime you squeeze in it, how much chile or salsa you pour over and drop some dices radishes in it too. Enjoy!
